Faço há muito tempo e sempre dá certo.&lt;br /&gt;&lt;br /&gt;Ingredientes (uma pizza grande, espessura média)&lt;br /&gt;&lt;br /&gt;7 gr de fermento seco para pão&lt;br /&gt;1 colher (sopa) de açúcar&lt;br /&gt;1 colher (chá) de sal&lt;br /&gt;1 xícara (chá) de leite morno&lt;br /&gt;1/2 xícara (chá) de óleo (uso sempre girassol ou canola)&lt;br /&gt;2 xícaras (chá) de farinha de trigo&lt;br /&gt;&lt;br /&gt;Misture o fermento ao açúcar, sal e leite. Acrescente o óleo e a farinha e sove bem, até que a massa esteja lisa e soltando das mãos. Se precisar use um pouco mais de farinha. Coloque em um bowl enfarinhado e cubra com um pano para que a massa fermente por no mínimo meia hora.&lt;br /&gt;Após a fermentação abra a massa em superfície enfarinhada, cubra com o recheio de sua preferência e leve para assar em forma untada levemente com azeite.&lt;br /&gt;Solte a imaginação e crie o recheio da sua preferência. Deve ficar bem moído. Em um bowl temperar a mistura com o azeite, o shoyu, a pimenta, wasabi e sal. Como o shoyu já contém sal, cuidado, uma pitada generosa já deve bastar.&lt;br /&gt;Misturar tudo e modelar os hamburguers. Adicione o açúcar e a manteiga. Acrescente o buttermilk, a farinha, bananas e côco. Bata até ficar homogêneo. Adicione o fermento no final misturando levemente.&lt;br /&gt;&lt;br /&gt;Asse em forminhas de papel por cerca de 20 minutos, ou até que estejam levemente dourados na superfície. Acrescentar o óleo, a água e o sal e sovar até ficar uma massa homogênea. Modele bolinhas e coloque para crescer em um tabuleiro polvilhado com fubá. Após 15 minutos abrir cada bolinha numa superfície polvilhada com fubá e com três dedos criar uma depressão na massa, fazendo com que o meio fique mais profundo que as bordas. Bata o creme na batedeira como se fosse fazer chantilly. Velocidade constante, sem parar. Primeiro o creme vai atingir o ponto de chantilly, com picos bem firmes. Depois, sem parar de bater o creme vai parecer coalhar, e vai começar pouco a pouco a amarelar.&lt;br /&gt;Após alguns minutos começa a soltar o soro do creme e separar da gordura. Se for usar o corante ele deve ser acrescentado a água morna. Bata a massa até que a mistura fique lisa e homogênea. Eu precisei acrescentar mais 1/2 xícara de farinha de centeio pois achei a massa muito pegajosa. No total bati por cerca de 20 minutos.&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-family: Times, 'Times New Roman', serif;"&gt;Retire a massa da tigela e modele os pães. A massa sai molinha mesmo, se precisar use um pouquinho de fariha para ajudar a modelar. Coloque os pães em formas de bolo inglês, salpique água gelada e fubá por cima. É importantíssimo peneirar para que o biscoito fique leve e aerado. Acrescente a essa mistura as claras, nozes e a baunilha. Pronto. Acabou! Não parece mentira?&lt;br /&gt;Prepare uma assadeira com papel manteiga. Coloque a massa preparada deixando cair de uma colher de sopa, formando um círculo. Disponha os biscoitos dando distância entre um e outro, pois eles esparramam no forno.&lt;br /&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;Asse em forno 180 graus, por cerca de 10 minutos. Retire do forno o papel manteiga e deixe esfriar completamente antes de manusear os cookies. Untar uma forma com azeite ou óleo e acrescentar a massa batida. Com um garfo adicionar a couve, mesclando a massa levemente. Adicione a farinha, o azeite e o sal e misture. Sove numa superfície enfarinhada até que a massa fique homogênea. Coloque para crescer por cerca de 1 hora coberto por um filme plástico ou pano de prato, em local livre de umidade ou vento. A massa deve sobrar de tamanho.&lt;br /&gt;Após esse período acrescente o tomilho ou alecrim, sove mais um pouco e modele bolinhas. Unte cerca de 16 forminhas de empada ou muffin com azeite e disponha as bolinhas de massa. Cobrir com papel alumínio e assar por 30 minutos ou até que a carne esteja macia. Após o cozimento pincelar a costela com o molho barbecue e retornar ao forno sem o papel até gratinar. Coloque para escorrer. É preciso estar bem seco para misturar a carne. Caso não esteja coloque num tabuleiro no forno por alguns minutos. Em um bowl misturar a carne, o tomate, a cebola, o alho, o pimentão e os temperos. Acrescente o trigo e misture bem.&lt;br /&gt;Em uma forma untada levemente com azeite arrume o kibe, prensando com as mãos. Por cima coloque as rodelas de cebola. Mexer até ferver em fogo médio. Após fervura abaixar o fogo e mexer até que atinja a coloração desejada ( eu gosto dessa cor caramelo claro, mas pode ser um pouco mais escura. No meu caso levou 30 minutos depois da fervura para atingir essa cor). O doce começa a desgrudar do fundo da panela. Nesse ponto desligue o fogo, acrescente a manteiga e mexa vigorosamente por 2 minutos. No caso de conservas devem ser bem escorridas, porque a água atrapalha o resultado final. Alguns legumes ficam melhores se cozidos. Eu cozinhei a cenoura. e refoguei o alho poró fatiado em azeite rapidamente para suavizar o sabor.&lt;br /&gt;Bata ligeiramente os ovos com um garfo. Acrescente o óleo e misture bem. Adicione as farinhas, o sal, o leite, orégano e o fermento. Por fim acrescente os legumes mexendo delicadamente.&lt;br /&gt;Coloque em formas de papel para cupcakes ou formas de metal/silicone. As de papel devem ser colocadas dentro de formas de metal para não abrirem enquanto assam. Não cabe aqui o teste do palito, pois o brownie deve sair do forno com interior úmido.&lt;/span&gt;&lt;/span&gt;&lt;br /&gt;&lt;span class="Apple-style-span" style="color: #333333; font-family: 'Trebuchet MS', sans-serif; font-size: small;"&gt;&lt;span class="Apple-style-span" style="font-size: 13px; line-height: 15px;"&gt;Retire do forno e deixe esfriar completamente, o que demora mais de 3h. É bem aromático e saboroso, além de ser super fácil de preparar. O yakisoba chinês é tradicionalmente preparado com lámen (miojo) cozido e frito em óleo de gergelim. Eu pulo essa etapa. Fica bem gostoso também e mais leve. Os puristas que me perdoem.&lt;br /&gt;Esse foi feito com lombo suíno mas pode ser preparado com frango, camarão, apenas legumes...&lt;br /&gt;&lt;br /&gt;Ingredientes&lt;br /&gt;&lt;br /&gt;190g de lámen (2 pacotes de miojo)&lt;br /&gt;2 xícaras de legumes a escolha (usei brócolis, cenoura e couve-flor) cozidos al dente&lt;br /&gt;1/2 xícara de champignons em conserva&lt;br /&gt;1 xícara de lombo em cubinhos *&lt;br /&gt;3 colheres (sopa) de óleo de gergelim&lt;br /&gt;shoyu (molho de soja) - o quanto baste&lt;br /&gt;gergelim torrado e cebolinha a gosto&lt;br /&gt;&lt;br /&gt;Cozinhe o lombo e reserve. Cozinhe o lámen, reserve também. Em uma panela antiaderente aqueça o óleo de gergelim e acrescente o lombo. Doure levemente e acrescente os legumes cozidos e o champignon. Junte o shoyu e deixe reduzir um pouco.&lt;br /&gt;Acrescente o lámen incorporando os ingredientes e salpique gergelim torrado e cebolinha para finalizar.&lt;br /&gt;&lt;br /&gt;* Utilizei lombo defumado já dessalgado. É um fondant, palavra francesa que significa fundido. Existem diversos tipos de fondant, como caramelo, baunilha e até mesmo de queijo. Esse de chocolate tem sabor forte, denso, intenso.&lt;br /&gt;Na medida para chocólatras de plantão!&lt;br /&gt;&lt;br /&gt;Ingredientes Massa&lt;br /&gt;&lt;br /&gt;450 g de chocolate em barra amargo&lt;br /&gt;7 ovos jumbo ou 9 pequenos&lt;br /&gt;150 g de açúcar&lt;br /&gt;300 g de manteiga com sal - temperatura ambiente&lt;br /&gt;&lt;br /&gt;Derreta o chocolate em banho-maria.&lt;br /&gt;MUITO CUIDADO PARA NÃO ESPIRRAR ÁGUA NO CHOCOLATE.&lt;br /&gt;Chocolate e água são piores inimigos.&lt;br /&gt;Em outra tigela misture os ovos e o açúcar e leve ao fogo em banho-maria também até que as gemas dissolvam e a mistura fique homogênea.&lt;br /&gt;Numa tigela grande misture o chocolate derretido, a manteiga e a mistura de ovos com açúcar até que fique bem homogeinizado e líquido.&lt;br /&gt;Asse em forma untada com manteiga ou margarina durante 50 minutos, 180&lt;span class="Apple-style-span" style="font-family: arial, sans-serif; font-size: small;"&gt;°. O teste do palito não é necessário, pois ele sai do forno ainda cremoso, com a superfície quebradiça. A minha é a versão preparada por minha mãe há muitos anos, com pequenas variações minhas.&lt;br /&gt;&lt;br /&gt;Ingredientes - para 2 pessoas&lt;br /&gt;&lt;br /&gt;500 g de bacalhau&lt;br /&gt;4 batatas&lt;br /&gt;1 cebola&lt;br /&gt;2 ovos cozidos&lt;br /&gt;1 maço de couve&lt;br /&gt;1/2 xícara (chá) de azeitonas pretas&lt;br /&gt;2 dentes de alho espremidos&lt;br /&gt;1 colher (sopa) de manteiga&lt;br /&gt;folhas de louro, pimenta moída, coentro e azeite a gosto&lt;br /&gt;&lt;br /&gt;Deixe o bacalhau de molho em água fria desde a véspera. Troque a água algumas vezes, umas 3 bastam. No dia cozinhe o bacalhau em água, por cerca de 15 minutos com folhas de louro para saborizar. Após o cozimento retire a pele e as espinhas. Cozinhe na mesma água as batatas e a cebola cortada em 2 partes.&lt;br /&gt;A parte, refogue o alho em azeite e manteiga (dá um sabor especial). Quando dourar acrescente a couve e tempere com sal e pimenta. Reserve. Acrescentar o morango e as gotinhas de limão. Neste momento a calda criará grumos, que dissolverão após alguns minutos mexendo.&lt;br /&gt;Fica ótima quente para acompanhar sorvete, ou fria como cobertura de tortas e mousses.&lt;br /&gt;&lt;br /&gt;Beijinho (tradicional né, mas vamos lá)&lt;br /&gt;1 lata de leite condensado&lt;br /&gt;1 colher (sopa) de manteiga&lt;br /&gt;1 xicara (chá) de côco ralado&lt;br /&gt;&lt;br /&gt;Misturar tudo numa panela e levar ao fogo brando mexendo sem parar. O ponto de enrolar é quando começa a desgrudar do fundo da panela. Para fazer as verrines retirei um pouco antes.&lt;br /&gt;&lt;br /&gt;Agora é só montar: beijinho no fundo e calda em cima. O azedinho dos morangos contrasta muito bem com o doce do beijinho. Esses são bem parecidos com os vendidos na famosa Casa do Alemão, no RJ.&lt;br /&gt;São resultado de várias tentativas até que a cremosidade e capinha crocante me satisfizessem.&lt;br /&gt;Os tradicionais são de carne, mas ficam deliciosos também se feitos com frango e camarão.&lt;br /&gt;&lt;br /&gt;Ingredientes (para 25 croquetes como na foto):&lt;br /&gt;&lt;br /&gt;200 g de carne moída&lt;br /&gt;1 colher (sopa) de azeite&lt;br /&gt;2 colheres (sopa) de molho inglês&lt;br /&gt;1/2 cebola picada&lt;br /&gt;2 dentes de alho amassados&lt;br /&gt;1 xícara (chá) de leite&lt;br /&gt;4 colheres (sopa) de farinha de trigo&lt;br /&gt;1 ovo batido com garfo&lt;br /&gt;sal, pimenta moída, salsinha a gosto&lt;br /&gt;farinha de rosca - o quanto baste&lt;br /&gt;&lt;br /&gt;Aquecer a panela com o azeite, o alho e a cebola. Refogar a carne, acrescentando, sal, pimenta, salsinha, molho inglês até que fique cozida. Neste ponto processar a carne até que vire uma pasta. Retornar a panela. Não deve ter muito líquido neste momento. Retire se for o caso.&lt;br /&gt;Num recipiente a parte misture o leite e a farinha de trigo. Resulta num líquido pastoso. Com fogo médio acrescente esse líquido a carne, mexendo sempre. A mistura vai engrossar e encorpar, até transformar-se numa massa que começa a desgrudar do fundo da panela. Quando a massa estiver homogênea e lisa, retirar da panela e despejar em um prato para esfriar. E foi justamente por estar morrendo de preguiça e com muita vontade de comer um docinho gostoso que fiz esses muffins.&lt;br /&gt;&lt;br /&gt;Ingredientes&lt;br /&gt;&lt;br /&gt;1 xícara e 1/2 (chá) de farinha de trigo&lt;br /&gt;1/2 xícara (chá) de açúcar&lt;br /&gt;1 ovo&lt;br /&gt;1/2 xícara (chá) de manteiga derretida&lt;br /&gt;2 colheres (chá) de fermento em pó&lt;br /&gt;1/2 xícara (chá) de leite&lt;br /&gt;1 colher ( café) de sal&lt;br /&gt;1 xícara de blueberry (mirtilo em português)&lt;br /&gt;Grãos de papoula a gosto&lt;br /&gt;&lt;br /&gt;Misture os ingredientes secos - farinha de trigo, açúcar, fermento e sal.&amp;nbsp;Em uma tigela a parte misture o ovo, leite e manteiga.&amp;nbsp; Incorpore as misturas e os blueberrys apenas o suficiente para incorporar. Não bata demais, isso tira a leveza do muffin.&lt;br /&gt;Leve para assar em forminhas individuais de papel ou silicone. Acrescentar o leite aos poucos e temperar com sal, noz moscada e pimenta branca. Deixar cozinhar até formar um creme, mexendo sempre. Pode servir de base para gratinados ou molhos com queijo.&lt;br /&gt;&lt;/div&gt;&lt;br /&gt;As panquecas foram recheadas com o creme de espinafre e 1 colher de sopa rasa de cream cheese. Aumente a velocidade da batedeira e bata por mais 3 minutos.
